Per Alex Hirsch, the twins' development was that Mabel needed to grow up and Dipper needed to stop being in such a hurry to grow up.
Well, that was really fucking lopsided in the show. Weirdmageddon in particular practically celebrated Mabel for not growing up and remaining static as a character, while Dipper was raked over the coals for wanting to pursue his passion.

nobody should be surprised that most of the overhyped cartoons of this decade turned out into dumpster fires, the people behind them were walking dumpster fires full of cans of worms covered in shit!
It was also for him, being without his twin/best friend would be a hell he isn't prepared for. Mabel should've had a better role though in the finale. I still think it should've been her that gives the moral raising speech and caps it off with if Dipper wants to do his dream job than that's OK because no matter what we'll always be best friends and then hearing all this is what makes Dipper change his mind. Instead Dipper is perpetually the mouth piece who holds Mabel's, AKA character that creates the drama/problems in the first place, hand through every dilemma.
I think it wasn't very well written, but I'm fine with the direction the show ultimately took. I definitely needed more time for Dipper to come to the conclusion that monster hunting with Ford was not for him. Mabel's arc in the finale was a load of shit, and I guess the comic getting her to admit that she's a shithead is somewhat comforting.
