Judging by the era it's in the Ultimate Universe is more pro-Imperialism and somewhat fascist and edgy. The event "Ultimatum" straight up killed the Ultimate Universe completely and lost a number of goodwill because the writers are trying too hard
Hickman's Ultimatum run is brilliant because not only we have a Captain America who is President, but also shows the effect of how a pro-Imperialist America can produce the worst kind of enemies. Even among your on allies. Which that version of Reed Richards became. And to change that would mean abandon the Imperialist route and actually start engaging
Also, we got Miles Morales. But honestly there are a number of things that have failed the Ultimate Universe completely, and nothing they can do will bring it back
Bendis is gone so it's good. If the Ultimate Universe intents to com back then it needs a truly creative writer that knows his shit. Also, a Ult. Peter Parker X Ult. Jessica Drew romance

President Cap came AFTER Hickman's run and Reed went bad before Hickman's run in the Ultimate Doomsday trilogy which had nothing to do with America's "imperialism". Him going bad wasn't explained beyond Sue leaving him and his ramblings about "the systematic raping of science".

Not at all there was very little edgy in Ultimate Spider-Man.
It was Millar with Hank Pym being abusive to Janet and Hulk being a GENUINE rampaging monster who kills tons of people.
Then Leob is the one who went full edge.

The whole point of the Ultimate Universe was to get invested in the characters all over again and to move away from SHOCKING deaths which were going full force in the MCU (not that Ultimate didn't have its own share of deaths.)
There was a glimmer of hope that somehow someone could unfuck what was going on after Loeb finished the dump he was talking with Ultimates 3 and Ultimatum. Blob eating the Wasp in a full page spread was the death of that hope -- nah, they're throwing away everything in an effort to shock us.

I started reading the Ultimate Universe to actually understand the 616 Universe more since I had no idea where to start. Correct me if I am wrong but will I miss on anything major after the Ultimate Universe / Secret Wars ?

No, you won't be up to date with 616 if you only read Ultimate and Secret Wars 2015. The only thing that happened after SW 2015 was Miles Morales being thrown into the 616 continuity.
Nope. The only element from the Ultimate Universe that survives is Miles Morales, the Maker and EXTREMELY nominally some of the Ultimates.
*616 Tony is alive and kicking. MCU Tony is dead. And 1616 Tony might as well be.

Wasn't just Miles, one of Wolverine's kids and evil Reed Richards made it over too. Probably some others I don't remember too.
Everyone’s grumpy except for Spider-Man and the Fantastic 4. I liked when Wolverine betrayed Cyclops, I didn’t like how unapologetically rude Storm was, and I didn’t like how Beast left the X-Men & joined another team only to be assassinated within 2 issues
