because the gauntlet couldn't, killing everyone took all it had, creating is presumably harder than destroying and the gauntlet's power isn't actually infinite

because giving people more stuff doesn't actually help the problem, Thanos wanted to teach people to be frugal and conservative and learn to avoid the problem of scarce resources, all giving people more would do is encourage the reckless use that destroyed his home

Because the MCU version of Thanos is a fucking terrible character and in a misguided attempt to make him "humanized" they basically removed all the good part from him in the comics and also made his whole "half the population" beyond fucking idiotic.

Because he was a deluded madman who was entirely fixated on being right and enforcing his ignored solution that he believes would have saved his home on the rest of the universe. So deluded was he that he also believed that the universe would be grateful after he did it and would change their ways permanently.
