A character like Doom would absolutely not work in the current MCU climate, any actor worth a damn would refuse to wear the mask for the entire movie.

Depends. People now readily accept the idea of characters like Thor, Captain America, Hawkeye and Star-Lord wearing no headgear at all, despite it being a part of their traditional iconography. Who's to say the same thing couldn't be applied to Doom?

Problem is, Celestials are just Space Gods that don't talk. They look cool, but have no personality, and therefore aren't as memorable, compelling, or marketable.
Galactus is a better choice. He's as powerful as the Celestials, but unlike them he has a personality and goals, and is willing to engage with lesser mortals.

Pay a no name actor to play him, then pay a big name actor to voice him. Marvel can replace the no name actor as they please, as long as they keep the voice actor. And even without that, seeing what they did with Red Skull.

Doom's deal is that his face is fucked up, and the mask covers it from view. It's not his "costume".

I'm well aware. Just saying that the MCU has reworked aspects and characteristics that many felt were set in stone.

I like the Celestials a lot, but I'm willing to concede your point because yeah, they aren't too talkative. But I think they could definitely work as the villains of one movie, not as a whole arc (unless they go the route of Hickman's Infinity and do something like the Builders/Gardeners combined with the Fourth Host). Just imagine The Host arriving to Earth enigmatically, and Arishem stands there, as the Colossus of Gibraltar, and gives Earth the thumbs down as Exitar arrives to give Earth its final requiem.
That, or the Dreaming Celestial arc from Eternals, which might already happen anyway since they're going to have their movie, it's a matter of time basically.
Best thing is, despite the obvious Cosmic Marvel links with the Celestials, you can easily involve Thor here considering the many arcs that had him tussle with the space architects.

I thought they were beings that had evolved into energy lifeforms, so they made giant suits so they could still be assholes to the rest of us.

They're also scientists, for sure, each of them fulfilling a specific purpose. Their origins are murky, but it's said they are multiversal in nature, as part of the ebb and flow of reality. Ultimate purpose: unknown.

They should go with the au Galactus plot point of him eating planets so that Celestial eggs can't hatch en masse and thus keeps their population low. That way they can have Galactus be a major threat who can actually talk, but still have the Celestials be the big bad.

you don't have to mocap the face like Thanos or Hulk, he could be just a body double, you could need the actor for close-ups of the eyes if they go with that mask design, but that could be added with CGI too

In Infinity Gauntlet, they weren't. They're part of the Cosmic Pantheon therefore beyond the direct effects of the Infinity Gauntlet, even though Thanos could overpower them eventually.
