Gravity Falls has only one white young male lead, Dipper (as Stan is old and Soos is Hispanic), so they had to ship him either with his sister (as she's young and white), with Wendy (as she's also young and white), or they humanized Bill into a young white male - and Wendy might seem kind of weird because of age difference, hence it's lower popularity. There, that's the reason for most popular GF ships - and honestly, for ANY popular ships in any show or work of fiction.

Slim pickings. Hell, Padippica didn't become really popular until S2, the main S1 ships were Wendip and Pinecest, followed distantly by Candip. Robbel was also a thing but I'm not sure how popular a ship it actually was.
