Shooting anything but dialogue scenes is more expensive and time consuming so generally they prefer to just make as much CGI as possible.

They can't have people who don't have super powers such as super accuracy and super visual perception doing kung fu fighting style scenes in an MCU movie because it messes with the logic behind other fight scenes that have already happened in the MCU.
If it takes place in modern times, it would make one wonder why Captain America and others like Crossbones who seemingly had studied various martial arts during MMA training didn't also use amazing kung fu techniques that can actually be used well in real fights that don't take place in small confined spaces and not just in choreographed movie fight scenes, but aren't used to any prolific degree in MMA competitions in the world of which the MCU exists within. This world in which the MCU exists seems to be very similar to the real world if not actually abiding with the conceit that the MCU takes place in our real world which the ad of Tony Stark at the Eiffrel Tower for Civil War seemed to put forward.
It might also mess with things such as fight scenes that they might want to do in the MCU that take place in various times in history in East Asia and elsewhere.
Additionally, some people would argue that if Shang Chi wants to seem to be inspired by Bruce Lee or similar to him, but existing in modern times he should have learned to be proficient in more than kung fu fighting styles much as Bruce Lee had learned more than kung fu fighting styles. Some people would argue that Shang Chi in a movie that wants to be inspired by Bruce Lee or have Shang Chi seem similar to him and that takes place in modern times should have him be proficient in fighting styles that were created or gained in popularity after Bruce Lee's death and shouldn't be limited to him using one style of fighting.
