None of these are redemption arcs, except maybe lemongrab

the rest behaved the way they did due to magical or demonic influence that changed their behavior, or were changed magically in some way in the case of sweetpea
They didn't work to change their behavior. Fern was influenced by a grass demon finn had to purge, Simon was driven crazy by the ice crown and was turned back to normal in gob's stomach
Betty got driven crazy by magic man's powers and was also turned back to normal in golbs stomach
Magic man was crazy with magic and lost his powers thanks to a botched ritual that finn interrupted
The lich was a genocidal monster that got turned into a sweet baby man thanks to ethereal magical nooch
Lemongrab fucking exploded but he was still more or less the same person after, he just slowly stabilized over time.

Pretty much. Although I would argue that Fern kinda had a "redemption arc" since the implication is that the demon was an inherent part of him, and that by destroying it he had to die. I don't think that Lemongrab had an arc of any kind; his episodes didn't form any kind of narrative or progression, really.

Not that splitting hairs really matters here. The entire second half of this show was garbage.

Ice king/Simon are different characters, but the redemption arc was only contained in Ice King.
Seriously, watch the whole show, he goes from cold hearted villainy (literally) to being a genuine good person.
