Ang Lee Hulk is still canon to the MCU. That Thunderbolt Ross is canon. Even Abomination is canon despite him not being showed. MCU Hulk got a healing-factor. Was impaled by Fenrir several times during Ragnorak but survived and healed. The aftermath of the snap was just too powerful and not something his healing factor can recover from. Just look at Thanos after 2 snaps, massive deterioration physically and can barely walk.
