Udon has to make their art faithful to the games. The games themselves thrive on flashy costumes with unique designs. They also maintain a house style that is close to jap art, keeping a consistent level of quality.
Marvel is redesigning everything to be MCU adaptation friendly. This means a lot of women in plain clothes or full body suits that mostly look the same. They have largely abandoned having a house style and the art varies wildly. Because of harsh deadlines and budget cuts, the art often suffers as a result.

They're Capcom's characters and Capcom doesn't want publishers fucking around with the look/history of their stuff. They know their consumer base and know that if you tried to make Chun-Li wear an unflattering full body SWAT outfit instead of her iconic look nobody would buy it. Udon is consistent with the overall quality and presentation because if they weren't they'd lose their Capcom license in a fucking heartbeat.
