Because if they go back and bring back Nat from another timeline, they doom that timeline since they'll never get the Soul stone to finish the plan.
They literally have 3 different characters explain out why things happen the way they do, I don't know how fucking stupid you have to be to not understand spelled out braindead capeshit time travel plot.
The real question is why don't they use their old attempted time machine that turned Scott into a baby and a teenager in order to turn Old Man Cap into a young guy again?

Yeah they just completely ignored the fact that they discovered the secret to eternal youth. The biggest discovery in Earth's and possibly the universe's history and they treat it as nothing more than a mistake.
That being said, Old Man Cap led a rich, fulfilling life. I doubt he'd want to be a young guy again. He was ready to move on.

Cap wasn't turned old against his will. He chose to grow old with Peggy and he's probably ready to live out the rest of his time until he dies.
