Why not use time travel to just fix everything?
Why didn't thanos double all resources or better yet just sterilize half the population?
The answer is all the same, the Russos are fucking hacks and the MCU has lost all of its kino since the beginning of phase 2
The Time Stone by itself showed a very limited ability to safely manipulate time in our reality, without the other stones or a safe means of harnessing it. Excessive use of the Stones by non indestructible/celestial beings always came with consequences. Strange was only able to use the Time Stone to powerful effect in a Time "dead-zone".

Its limited by the power and ability of the possessor, and the tools that are used to interface with it.
The Amulet was basically so the Sorcerors could have it in their hidey hole without it fucking with Time accidentally. They were pretty clear that dicking with it could destroy Time-space.
Why didn't they use Pym Particles already?
Because they didn't have access or knowledge of his tech. Not even old man Pym was attempting to use them for time travel.
Remember: every superheroic universe is doomed to die from bad writing.
When it comes to time travel there is never an excuse for not using it before, that's the whole point of fucking time travel you sperg.

Other times you get nasty Butterfly Effects.

Sure, limitless consequence-free Time Travel solves everything, but outside of Groundhog Day, how often is that seen?
Time travel isn't a get out of jail free card, you still have to actually win in the past. Thanos was killing people easily without the stones.

Avengers are involved because a large percentage of the Infinity Stones were on Earth. Guardians are involved because a number of them have personal connections with Thanos. Xandarians aren't involved because he killed them. Same for most Asgardians.

Stones would likely give him passive protection from time/space shenanigans like that. He probably can't be teleported/shunted through time by others, either.

Both are pretty deadly but at the same time having both seems kind of superfluous.

This. Even Janet, who spent 30 fucking years in the quantum realm, warned Scott that if he ended up in a time vortex there’d be no rescue. They didn’t know how to manipulate it to time travel safely/efficiently. And old man Pym was too stubborn and angry at the Starks to approach Tony to help him with it. Now we finally have Tony with Pym tech in his hands and enlightenment that you can use it to time travel.
Thanos is a Titan, but parenthetically, he’s an Eternal. His grandpappy was one of the first. They were offshoots of celestial experiments on earth, the other being regular homosapiens (some of which carried the mutant gene because of said experiments)
