I feel like Toffee should've, or I guess more like could've, been Eclipsa's child and stays dead the way he is in the show, but not with Globgor the way he looks now as his father because they obviously don't look related. Either this is a case like Moon the Undaunted where the tapestry depiction of him is wrong, OR Globgor and Eclipsa adopted him, which actually wouldn't work too well because then they couldn't do the half-breed thing.
Or they could've been lovers, but not with Meteora related to Toffee. I'm not sure how to fit her in exactly in that hypothetical scenario besides obviously being a Butterfly (maybe a princess who supported monsters and so got shipped to St. O's and quietly erased from history?).
How exactly should that have affected the plot? Yeah I dunno. It just gives Eclipsa a single instance in her life of actually having lost something she can't get back, and maybe helps makes things more ambiguous because you won't be able to tell if she's really on Mewni's side or is planning some long-form revenge by associated with the family who had a hand in killing her child/lover, even if he was dangerous and obviously evil.

I get the feeling this series is going to end with Star moving to Earth and Glossaryck revealing he orchestrated everything, (destroying Mewni monarchy, Toffee, end of MHC, etc...) so he could spend more time on Earth with its delicious pudding. While Eclipsa stands by her monster friend and lover, she also goes too far and either recklessly abandons all responsibility or advocates for the destruction of the "Mewman oppressors" regardless of the reality of the situation.
Star thus has two juxtaposing adult role models:

As it is, we have really no explanation for what his connection is to the Monster Temple that helped Ludo find it, why he had those spade-marks on his skull pauldrons, and why Eclipsa's eyes flashed in "Into the Wand" when Star jumped for Toffee's finger. I think they had some kind of plan for this at one point, but it got lost among changing storyboarders, or scrapped.

Apparently we should take away that the reason there was a flash to Eclipsa when Star grabbed Toffee's finger was that it was Eclipsa's spell that took away his finger in the first place.
But that really doesn't make a lot of sense given that it wasn't Eclipsa who cast the spell, and I really doubt that's what was originally planned when Into the Wand was being storyboarded.
Then again, they might not actually have planned it out at all yet. It could've just been that they wanted to hint at some mysterious connection between Eclipsa and Toffee, but hadn't actually decided what that connection would be.
