It's merely an aesthetic choice given that Nabu The Wise was a powerful Egyptian sorcerer in life. In death he's a Lord of Order, and bound his powerful soul to the Helmet of Fate. When the user, favorite being Kent Nelson, wears the helmet they are gifted with all of Nabu's power and knowledge. What level of control between Nabu and the wearer has is inconsistent. Sometimes Nabu is fully in control, other times the personalities fuse into one new being.

That's not exactly true. He was a lord of order who lived as a sorcerer.
In pre nu52 canon, lords of orders are the first beings, along with lords of chaos, before the new/old gods.
And Nabu was among them.
So, he was first an eldritch being, then vacationing in Egypt.
