Ford stood by while his asshole dad tossed his brother out on the street because he was angry about his missed opportunity to get into his dream college.
Dipper wanted to get an early start on his dream career but still wanted to work things out so that he and Mabel could still stay connected.
The only equivalence is that both Stan and Mabel were too reliant on their siblings. Stan was justified because Ford literally turned his back on him in his time of need. In contrast, Mabel threw a tantrum when she realized life was changing.

Several times the series hit on the idea that Mavel was wise for enjoying her childhood and Dipper was foolish for trying to grow up too fast, but how about just once, at the end of the series, Mabel's childishness is the problem and Dipper's relative maturity is the solution?
Just about the last thing that happens is the twins turn 13, after all, and there's a symbolic element in "being a teenager".
Instead Dipper grovels and submits to Mabel and she makes a meaningless gesture that costs her nothing by giving him *permission* to go when he already said he wouldn't.
