Bears have dog-like noses and very round ears, cougars and other large cats have a very distinct triangular nose and more pointed ears. It's always possible Stan just took creative liberties with it, but the evidence points much more toward him being some kind of large cat. He might even be a lion, like Katsuichi, but with a shaved mane because of samurai/monkhood.

I went and binge read all the previous threads when I saw this and went OH THAT THING,
it was a very cool exposition, the MFA has one of the best japanese art and artifact collections in the country, which is kinda odd for a place on the east coast but it was very interesting the way they juxtaposed panels and originals from this comic with actual historical artwork and arms and armor to show how Stan really did his homework.
