It depends on the season. The drug cartel and second dream season are utter dog shit. You will probably only watch em once, which is sad since a lot of the other episodes have a lot of rewatchability. Season one is a bit slow and awkward, as to be expected. It picks up a lot, with a couple drops in quality but overall plus. Then the drug season happens and it is basically one long running joke that overstays its welcome. The following seasons up to the first dream season are good, even the first dream season has its own charm. Then they go full "lol, look at this dream and totally new characters that look like your old favorites, but with new traits".
Tl;dr: If you want to watch it, it is definitely worth your time, but expect some occassional garbage up until it becomes apparent the writers are bored with the setting.

Hank Hill. I don't feel like downloading and posting an image of him because everyone knows Hank Hill. Honestly, almost everyone I know is familiar with Hank's character, his famous lines and his relationship with Bobby, yet I don't know that any of them watch the show, beyond maybe an odd episode or two.

These lines are universally recognized. It's almost like how people can say "May the force be with you" even if they can't name a single Star Wars episode. King of the Hill was both critically and financially successful, of course, but the character of Hank has far surpassed it.
