Morty was just pissed he had to waste his Rick-free day in trying to help Summer turn back to normal, so he lashed out at the first weak person he could find for any asinine excuse. You weren't supposed to find him sympathetic.

Summer is dumb, annoying and self-centered. This kind of character exists to conduct itself arrogantly and then suffer from it's own mistakes so the viewer can laugh and feel a just sense of schadenfreude. "Haha! Serves you right, you dumbass". And it only works in small gags. It shouldn't had been the episode's plot and she shouldn't had been chased after and consoled.

Can't say I wouldn't have done the same thing in her position.
