What is it about this show that makes cynical youtube "critics" seethe so much? I doubt its the worst cartoon airing right now (if you can call it airing, since it only gets new episodes once a year).

Theres like a dozen videos of people tearing into what is a mediocre kids cartoon about loving yourself. Does it really warrant this much hate? You never saw this amount of vitriol for something like Adventure Time or Regular Show which is about on par with SU's quality, so what gives?

It's positive and its sincere about its message. It makes people mad that it's not technically impressive or well put together at times and yet still keeps on trucking regardless.

So many ways, it actually makes me struggle to even list them.
1. Because it makes "being yourself" look appealing, even when doing so is lazy stagnation that ruins people and arrests their development. "Being yourself" is the excuse every fat person uses to avoid losing weight, every idiot uses to avoid studying, and every self-righteous twat uses to avoid listening to anyone else's critiques or arguments. (And, good gracious, who do we know fits all three criteria to be a fat, stupid, self-righteous twat, rolled into one?)
2. Extending that to Steven's family, he has four effective parents, and none of these idiots know how to establish discipline for dick. It's never addressed. Steven is 13, and doesn't go to school; he fights monsters on a regular basis with powers the gems know are underdeveloped; his diet is the literal American stereotype; and none of his four "parents" give two shits. Oh, sure, they each have their own faults the show'll talk about in emotional diatribes from time to time, but the fact that they're raising their kid up terribly? Not even once.
3. Fuck gay propaganda. Fuck it all. 80% of this show is an allegory for LGBT being beautiful and society being archaically oppressive and critics being 2-dimensional bigots, and it poisons the well like the River Ganges.
4. Good God, Steven's voice... I hear that tremulous high-pitched wail one more time, and you'll see me on the news.

I can't go on, this show's got 60+ episodes in it and picking apart the faults of all of them would consume my day.

Definitions aren't set in stone, even historical definitions. Take Liberal and Libertarian. Liberal used to mean wanting small government and individual rights, not so much anymore. Libertarian was used to describe Anarcho-Communists. Not so much anymore. Definitions are collectively decided and ultimately I'd say you'd be hard pressed to find people who share you're definition and wouldn't call someone who believes in a lot of the ideological tenants of Nazism a Nazi. I'm talking about the idea that is called Nazism in the modern day. You're talking about the actual German Nazi government. Neither of us is objectively correct, but its all a mater of which definitions, not any real disagreement.

Though, that reminds me of, "The Yada Yada" from the seinfeld. Seinfeld talks about dentists throughout the whole episode with some level of disdain. He's upset that his dentist watley (played by bryan cranston) converted to judaism for what jerry suspects is just to be able to tell jewish jokes. Kramer confronts Jerry and accuses him of being, "a rabid anti-dentite!" "Next you're going to say they should have their own schools!"
"Kramer, they DO have their own schools." This goes on for some time until the end of the episode until he attends a wedding with someone who jokes, "Hey, what's the difference between a sadist and a dentist? The sadist has newer magazines."

The characters are literally the strongest aspect, each one is deeply flawed without Steven's guidance but are perfectly strong as well in other areas of their personalities. They stand out, and not a single one of them is similar to the last. Even gems of the same exact type aren't the same.

The problem is that these videos aren't critiques. They're hate rants made by people who hate the creators and want to make everything in the show out to be bad and say it's the worst cartoon of all time, and that's just not the case. They refuse to be objective.
