In the case of Mordecai and Rigby i think it's just because as friends you naturally see them close and intimate, just not in any romantic kind of way. So that makes it easier. Also when it's down to speculation your imagination can make the relationship as good or bad as you want it to be.

She was a deeply flawed character, but so is everyone else on that show, and I think her good outweighed her bad. I'm still mad about how the show handled her in the end.
