Oh, that was bothering me for a while as well, but I finally forced my brian to see how it really is.
While sometimes it is hard to tell, even when looking at the colorised covers, in many shots (especially those showing the back of his head) we can clearly see that Usagi actually uses a piece of cloth to tie his ears together. Confusingly, it has a very similar (but not exactly identical) color to his fur.
Now if only I could finally stop seeing his scar as a raised eyebrow...

That one princess he once escorted for his lord and who fell madly in love with him? Married another, because politics.
Tomoe? Will marry another and wants Usagi to change his wandering lifestyle.
Chizu? Totally into him, but needs to take back her clan first.
In short, off all the women in his life, only Mayumi was enamoured with Usagi, considered being with him her top priority and accepted him for who he is. In other cases there is/was always a catch.
