Basically, a young mangaka named Osamu Tezuka went into a theater to see a movie called Snow White and the Seven Dwarves in 1950 and was inspired to singlehandedly create the anime industry in Japan. You can trace the old anime trope of a beautiful main character surrounded by a bunch of short, lumpy dudes, all with big giant eyes directly to Snow White.

Disney as a company or a man didn't create the huge eyes, it was a designer worked for them and like all the original creators of Disney things, the writers and artists they have been forgotten. Walt Disney took the credit for many things and characters he didn't create. We could say it was similar to DC and Bill Finger vs Bob Cane though I think Disney didn't add anything while at least Bob Cane had the idea of a Bat-man
