So much to unpack here... that's one of the Crimson Lotus' familiars. We know she's Daimio's grandmother by this point, so it could very well be a final blessing on her part that is radioing in for evacuation. The jaguar god has a bunch of symbolism. First thing though, it's not obviously a demon or Ogdru Hem. It does have "demon eyes" but so do a lot of fair folk. The split open torso and limbs are reminiscent of the monsters Katha-Hem created in the previous BPRD story. The burning heart resembles the Catholic sacred heart symbol, last notably seen in Hellboy in Mexico, where it was associated with the Virgin Mary. Pure white birds represent freed human souls in the Mignola-verse, especially in a spiritual context like this. Finally the jaguar god has touches of flame around it, the flames at the tail remind me of the flames demons call up on their brow as opposed to Liz's vril flames. The flames around the heart are typical of the symbol, but I speculate that the Virgin Mary that they three brothers from Mexico saw was actually a vril maiden, making this a symbol of the vril. The flames at the whiskers(?) are just odd.
So what is the jaguar god? I have no goddamn idea, based on the above. It SHOULD be a powerful spirit/fae that was capturing human souls for power, and then was wounded(?) in such a way that it could no longer contain the souls, which would be why its cult is now actively hunting people to sacrifice to it. In earlier stories, we were told that the souls of the pure/innocent/good have higher value than sinners, regardless of their belief system. The jaguar god is taking Daimio's soul, giving him its "blessing" and using that to keep him alive/gather more souls for the jaguar god as his avatar.

To be fair, they're clearly bloodlusted for revenge, giving some mortal a bauble or not would probably be the furthest thing for their minds. Plus their hatred for Fabre seems to extend to everything he cherished, so keeping any part of his collection intact also seems like a no-go.
