Greentext poster here. I imagine it as being more as the symbiote seeing it with whatever information sensors it has, and then relaying the info to Toph.
A very fast game of telephone. If the symbiote is wrong, then Toph is wrong. Toph has no idea what written characters look like, unless on the off-chance they are carved into stone, but even then she'd still have to learn them and their meanings. She is reliant on Venom for this important info.

To be completely honest, I've only thought about information gathering via the symbiote learning written human language and sending the info to Toph, since it would be completely alien to the planet, but still more advanced in learning capability. Sound and sonar never occurred to me since Toph would be reliant on her own ears, and seismic sense, and could trust them, and not the "demon's ears."
Perhaps it could enhance her hearing to superhuman levels beyond her already excellent hearing. That could definitely be helpful if you're a police chief of a big ass city. As for the sight reparation, I don't know. Personally I think it'd do more harm than good. Toph doesn't actually know what any of her friends or comrades look like via light-visible-to-human-eye based sight with her natural eyes, only her seimic sense and hearing. Maybe it could cause an information overload, nausea. I'm just throwing ideas out there.
As for symbiote related healing factor capabilities, it depends if anyone wants it to clash or mesh with the already existing waterbending healing capabilities. If all the waterbending in the world and the avatar couldn't heal blind people, but this alien could, it would blow peoples' fucking minds.

Yeah, I agree. If given the option of getting her eyes fixed, she'd refuse since she has lived so long without them. It would do more harm than good. That, and I believe in a do-or-die situation, her brash personality would crush any sentimentality that comes with seeing her friends for the first time.
Also, since she's completely capable with her earthbending/metalbending, I think the only power up she'd need from the symbiote in general (besides desert environment upgrades) is enhanced strength. Unless she gets bloodbent and the symbiote goes beserk.
