Any ideas on how Seth McFarlane's reboot would've turned out? No way was he thinking of using the Family Guy art style, right?

In the best case scenario he would have stopped being creatively involved after the first season and it would have developed its own identity like American Dad.
But I'm pretty sure MacFarlane was very involved in American Dad though, more so than Family Guy? It's basically his Futurama.
Nope, Seth’s presence is precisely why AD’s first season is the worst one. It was originally just political Family Guy, cutaways and all.

More Wilma fan service
IIRC the reason it didn't get made was that Seth wanted to lean more towards traditional Flintstones while Fox or whoever wanted it more like Family Guy.
So, an Orville situation?
Probably.
Seth didn’t know what to actually do with the show so it really did never get made
Why has every attempt to reboot this franchise failed so hard?
zoomers want the future not the past
fun fact: the flintstones were supposed to have a son but he was removed from the show
I guarantee you there would have been some gag about cigarettes because of the old commercials.
What the fuck is a zoomer?

Basically anyone born 2000 and later.

That was the plan, but when Family Guy got its second leash on life, MacFarlane shifted more creative control for American Dad to Mike Barker and Matt Weitzman.

MacFarlane was open about AD being a replacement for FG, but with FG came back, the AD staff was determined to make their show into something more than a copy cat.
It's really fascinating to see the show evolve throughout the first season; slowly discovering its crazy, clever, and ambitious voice.
The comic was good.
An old Cartoon Network TV Movie where they all go on vacation, and is notable for being a bit more "adult" and having the same overall tone as the show's first few seasons before Pebbles
