There's a lot of subtle differences. The real chowder has much more organic construction and is much more asymmetrical. Calarts chowder is made up almost entirely of extremely basic perfectly symmetrical geometric shapes. Calarts chowder also has all around awful construction, with each individual element that makes him up just kind of floating in 2D space, rather than actually being attached to any larger form.
It's not a difference in design, it's a difference in art quality

It was alright, and scouring the scenes for references was neat, but it 100% should've been a longer episode like they originally planned.

I think the animators didn't realize the crew might've wanted them to draw those characters more "on-model" that they're used to when dealing with the show. The model sheets Ian himself made for the punch scene looked dang on-model
