dragon's dogma is monster hunter + DMC + the most generic fantasy RPG fare you can think of + a lot of walking

Well I tried to play dark souls on the switch again and lost interest at the undead burg.
Not from difficulty just fucking boring while I can boot up demons souls and do a full play through.

Dragon's Dogma is sort of an acquired taste.
You have to slog through the beginning until you get to the main hub before you can finally get your adventure going.
Even so you have no vocations or skills so it takes time to find a class you really like.
It takes some patience but if you can push through, the game can be pretty fun.
It's fun climbing massive beasts and attacking their weakpoints so it has some Monster Hunter elements you may like.

The lost me with the switch between classes to get better stats.

DD has very little in common with Souls. It's a more adventurous, laid back MH.

I think you might not think it as great as everyone else. The game has great boss fights but that's not what makes the whole experience and if you didn't like DaS then it's hard to think you'd enjoy what DDDA brings beyond the combat

The fact that you can stomach incomplete JRPGs like Demon's Souls and Dark Souls is a good start. Dragon's Dogma is definitely a game where you would want to watch specific playthroughs on YouTube to understand, because experience with missions makes the game's shortcomings more enjoyable.

Treasure respawns in seven in-game days, hardcore farmers go back to their home village via Eternal Hearthstone (or whatever it is you get from your storage at the Gran Soren Inn) and talk to the innkeeper, making sure to sleep till morning...seven times in a row. One trick for farming specific items is to save directly in front of a chest, then quit without saving if the item you want isn't in the chest.

I'm just going to samefag with more useful advice.

Pawns learn from (You)r actions. If you make a pawn, make sure they are the exact same class you are. If you make them a wizard, when they are a ranger, they are going to stand in place, doing nothing during fights.

While the likelihood is insanely low, due to how niche this game is, if you have multiple friends with high level characters, you can "hire" their pawns for free if they are on your friends list.

There is no real superior build, due to how the balance of the game is. Magic users are ridiculously powerful in endgame, but face death constantly at low levels. Melee fighters are great for the majority of the game, but suck against some of the endgame bosses that require bows or magic.
