I knew several bartenders years back, always bitching about tips and how not tipping was bullshit. They constantly had 300+ dollars in cash on them without a second thought, complaining that they can barely make it pay check to pay check because they only counted the check they were getting as money they made. It's like they thought tip money was fun money.

No you just cross it out and write the total before the tip. If they still run it through later anyway have it charged back and report fraud.
