There's the one scene in the beginning of the Two Towers where the uruk-hai raid the villages in the Westfold and that's like a rare moment in the whole trilogy you get the notion there are supposed to be peasant farmers in the countryside, despite you only seeing the heroes traveling between iconic places.

The whole purpose of castles is to allow a small group of people to defend against greater numbers, by bottlenecking the enemy. By making your castle huge, you are increasing the number of required defenders, but also decreasing defensibility, as the attackers can utilize their greater numbers better.
For reality vs fantasy size comparison: the largest real-life castle was some crusader castle with a thousand defenders, vs Casterly Rock with the garrison of TEN THOUSAND.
