Can Steven Universe shapeshift? (not the shitty leg and arm shapeshifting, like legit entire form) What would he look like?
Do Diamonds (besides pink) shapeshift? Do they have different shapeshifting abilites? What if steven creating cats when trying to shapeshift is because of diamond powers?
Probably all gems can do it, amethyst is just better at it?
Hard to say, I think Cat Fingers kinda gave him ptsd about trying anything too extreme, plus it's assumed that his human organs would have to reasonably fit in whatever form he took
He has gotten stronger as we’ve seen, it’s not impossible, hell, maybe he’ll make like tiger arms in the future or something.
The times he has done it, the results nearly killed him. He tried to grow slightly taller for the day, and ended up reverting to an infant. He tried to think mature thoughts, and nearly died of old age. He tried to make a finger look like a cat's face for fun, and was moments away from potentially fragmenting into dozens of cats that scatter into the distance.
Why don't all gems shapeshift as a combat advantage?
I mean, he was younger back then. In "Too Short to Ride" he just did it normally
In theory he can, but we haven't really seen anything one way or the other, he might have mastered them in the 2 year time jump or he might still be around the level from his birthday episode, where he can just stretch a bit.
If he's better at it now, they didn't make use of it in the movie. Maybe they will save something for the next season, on the remote chance there is a next season.

She also said that it’s frowned upon on homeworld to not use your standard form.

they probably dont want amethysts shapeshifting to sneak into the private agate lounge, stuff like that. Also I'm not really sure how its a combat advantage? It takes a lot of energy and doesnt make you stronger or faster or anything..amethyst turned into a helicopter but most gems probably aren't good enough to pull that off
It's explained on the episode where amethyst tries to fool rubies by shapeshifting into jasper. Apparently shapeshifting drains energy and can't hold that form for long. In another episode, there was also a scene where Jasper says shape shifting is inefficient tactic, probably meaning it spends too much energy compared to other jem powers. I don't remember exact which episode

He can turn into energy, just needed more practice, which he never did.

Pink reformed as Rose; it became her default
Also Steven is made of flesh. Whatever bullshit his gem magic is doing has to work around not completely destroying his fleshy bits

I guess since Steven is half human, he doesn't have all the powers/resources to do that, even if his mom was a Diamond
He could transform his fingers into cats, and that eventually almost killed him, I don't think he has the natural ability to keep his changed form stable
the real question is, if his mother wasn't Pink, would his skin be human-colored or not?
But Pearl/Rose didn't pretend to shatter Pink/Rose until almost the end of the war
How could she lead an army for hundreds of years if she had to switch back and forth between Rose and Pink every few hours?
Was Pearl turning into Rose Quartz the only time she was shown shape shifting?
Pink Diamond is a diamond though, she probably has reserves of energy that make others drops of water compared to an ocean.
